Good afternoon foodies! Today I will be showing you how to create this perfect summer dish for dinner or lunch. It's really easy and takes no more than an hour to make. Hope you all enjoy and don't forget to share :)

Prep Time: 35 minutes
Total Time: 45 minutes
Serves: 4

Ingredients:

  • 2 tablespoons of butter
  • 1 pound of shrimp (peeled, deveined, and the tails removed)
  • 1 teaspoon of finely chopped garlic
  • 2 large Pineapple
  • 8 ounces of pineapple chunks (from large pineapples)
  • 1/2 cup of Barbecue sauce
  • 3/4 cup of white rice
  • 1 1/2 cups of water
Directions:

  1. Cut pineapples in half. Scoop out all the insides and place them into a large bowl, including the juice.
  2. To prepare rice, add rice into a medium pot. Add water then wait for water to boil. Once the water is boiling, cover pot then bring to the lowest degree possible.
  3. Melt the butter into a 12-inch skillet over medium-high heat until sizzling. Add shrimp and stir occasionally. Cook until shrimp turns pink.
  4. Add pineapple chunks, tidbits and barbecue sauce. Cook over medium heat, stir occasionally until heated through.
  5. Once all is prepared, add 1/4 cup of BBQ Shrimp  and 1/2 cup of rice to Pineapple Bowl (or however much you would like to serve).
  6. Enjoy!
